Quick & Easy Chicken and Dumplings
If you have a hankerin for some quick, REAL good chicken & dumplins ….well, you need to try these! This recipe was my grandmother’s that I never got to meet. It was passed to me from my mother.
Approximately 4 to 6 boneless chicken thighs (or your choice of chicken type, I use thighs) cut up in diced pieces.
Around 3 cans of small biscuits cut four ways each
salt/pepper to taste
tsp of poultry seasoning (optional)
1 stick butter
1 can of cream of chicken condensed soup
1/2 can milk
Wash chicken, cut into small diced up pieces. Have water on stove in large stew pot (about half full of water) ready for chicken. Salt/pepper to your likin and the tsp of poultry seasoning(optional) and half of the stick of butter. Let chicken boil on high for about 5 minutes then on medium for about 10 more minutes..then add the cream of chicken and half can of milk, stir..doesn’t hurt to throw more black pepper in as well…. Then add the dumplings (canned biscuits) I buy small cans and cut them four ways and the rest of the butter. Cover & Let boil on med/high for about 20 minutes or med/low for about 30 minutes, stirring very often. The cream of chicken and milk really thickens them up. Every ingredient can be adjusted to the amount you want. Serve with hot corn bread or saltines. ~ENJOY~
