Jodie’s Easy Banana Bread (The Blind Lady Cafe)
This Easy Banana Bread is so good and is a perfect way to use up those over ripened bananas or be the ‘talk’ at your next family reunion or family gathering when you bring this yummy bread! Recipe adapted From The Blind Lady Cafe’s founder, Jodie Spratt! Feel free to share this easy banana bread recipe with your friends and family!
3 very ripe mushy bananas (mine were medium size) you will need about 1 cup mashed bananas
1 large egg
3/4 cup white sugar
1/4 cup unsalted butter, melted
1 1/2 cups regular all-purpose white flour
1 tsp baking soda
1/2 tsp salt
Preheat oven to 325 F.
Grease the pan you’re using and set aside.
In a large bowl mix together, the mashed bananas, egg, sugar and melted butter.
Add in flour and baking soda and stir until just combined. Batter will be slightly lumpy.
Add in salt and mix to blend in.
Pour in prepared pan and smooth top.
Place in preheated oven on middle rack.
Bake for 50-60 minutes – for a 9×5 loaf pan or until toothpick test is clean.
Bake for 28-30 minutes in a cake pan, or until toothpick test is clean.
Let cool about 5 minutes before removing from a loaf pan or cutting from a cake pan.
Variations: you could add in 1/4 cup of any of the following to jazz it up!
– chopped nuts – choice of walnuts, pecans, hazelnuts, almonds
– dried cranberries
– chocolate chips
Frost, if desired, with your favorite frosting – suggestions:
– cream cheese
– peanut butter
makes one large 9×5 loaf or in an 11×7 cake pan
