Jodie’s Slow Cooker Pulled Pork
5 lb boneless pork shoulder or butt roast. Trim down any big chunks of fat. Otherwise, leave whole as is.
1 medium size cooking onion, peeled and then quartered.
1 medium red pepper, seeded, stem off, and cut in thin strips.
1 regular size bottle of your favorite Sweet Baby Ray’s sauce – I used Hickory and Brown Sugar
About 7 or 8 shakes worchestershire sauce
Pour 1/3 of the sauce on bottom of your slow cooker.
Place half the onion and half the pepper over the sauce. Lay the pork roast on top.
Pour the rest of the sauce, onions and peppers over the roast. Shake the worchestershire over all the top.
Set on low, cover and cook 6 hr. Turn up to high and cook 3 hours. Uncover and shred apart with 2 forks or whatever is convenient. Mix together well. Re-cover and reduce heat to low and finish for another 2 hours.
Put on Keep Warm until needed.
*Tip* I start this the night before for the next day.
Terrific for cookout and buffet gatherings!! I occasionally add in about half can of root beer or coke.
