Refreshing and energizing on a hot summer’s day! Our Friends, Amber and Phil allowed me to share this easy coffee cooler recipe with you all! I personally love the mason jar touch as they make drinks and snacks taste better don’t you think?
Coffee Cooler
Ingredients:
1 1/2 cups coffee ice cubes (see note)
1 1/2 cups vanilla ice cream
1/2 strong coffee
1/4 cup milk
1 tsp. Coffee extract (I use Watkins brand)
Directions:
In a blender or smoothie maker, place coffee ice cubes pulse a few times, add remaining ingredients…blend by pulsing till well mixed and almost smooth (there should still be small bits of ice like a slush) Makes two servings.
NOTE: the day before Brew two cups of very strong coffee. Cool, freeze 1 1/2 cups in an ice cube tray (one tray holds this amount in the ones I use) save remaining 1/2 cup in fridge for cooler. I always freeze left over coffee for ice cubes in the summer, great for iced coffee too!
