This easy tater tot casserole recipe has been a favorite in my recipe collection book for years! Quick and easy and so many things you can add to it to make it even better. I’ll give you the basic recipe and add my favorite ‘Xtras’ at the end!
Easy Tater Tot Casserole
Ingredients:
2 lbs of ground beef
1 can of cream of mushroom soup
1 cup sour cream ( I use daisy lite)
2 cups of shredded cheddar cheese, divided
1 32 ounce package of frozen tater tots
Salt/Pepper to taste
Directions:
Preheat oven to 350 degrees F. Spray a 9 x 13 glass pan with cooking spray
Brown the ground beef and season with salt and pepper while browning, then drain
Spread ground beef in the baking dish. Whisk together –soup and sour cream and spread over ground beef in an even layer.
It will look like this
Then sprinkle one cup of cheddar cheese over the soup layer and top with tater tots
Bake 30 minutes. Remove from oven and sprinkle the remaining cheese on top and bake another 5-10 minutes until cheese is melted and tots are crispy and golden. (more salt & pepper is optional here also).
Prep Time is around 15 minutes / 8 servings Total Time: 55 minutes
The ‘Xtra’s’ I use in my casserole are onions and mushrooms. While browning the ground beef, add a diced cup of onion (about a half of a normal sized onion) and in the mixture with soup and sour cream, add a small can of mushrooms. These two Xtra’s make it perfect! You can also top with black olives and salsa to give it a Mexican taste.
