Crock Pot Chicken Cacciatore
I think I can speak for many folks when I discover a simple recipe using the crock pot, I want to give it a shot. Especially during nice weather and you have more things to do than to hang over a hot stove for 1 to 2 hours a day preparing meals.
I discovered this recipe from Pinterest, and spiced it up a bit with my own additions. So glad I tried it as it’s become a family favorite around here! Having pasta as a side is also our favorite and that can be your choice!
Crock Pot Chicken Cacciatore
Ingredients:
4 to 6 chicken thighs (small) or 4 breasts (larger) You can cut these in half if you want
Bottle of pearl onions, drained (or sliced sweet onion, your choice)
pack of tri~colored bell peppers sliced
Fresh mushrooms, whole or sliced
1 tsp of cinnamon and sugar
salt/ pepper to taste
1 jar of four cheese prego (3 cheese will work)
Directions:
Put all ingredients in slow cooker on low for 4 to 5 hrs or until tender.
I added a tad bit of water to get out the left over sauce in the jar but instead you can use red wine vinegar or red wine & also you can add some Italian seasoning to this too. Sides can be angel hair pasta ( your pasta of choice –pictured below) or rice. Serving size is 6. Refrigerate left overs as it’s really good the next day too!
We topped this off with a tad bit of shredded mozzarella cheese and Parmesan cheese. My last batch included pineapple chunks which made it totally amazing! This recipe makes it’s own liquid so be careful not to add too much water to get the sauce out.
