Quick & Easy Chicken and Dumplings
If you have a hankering for chicken & dumplings, you need to try this recipe! Its simple and quick. I have a lot to do around here and in return, it doesn’t allow me to spend much time in the kitchen! So yes, I’m down for quick & easy.
Quick & Easy Chicken and Dumplings
Ingredients:
Approximately 4 to 6 boneless chicken thighs (or your choice of chicken type, I use thighs) cut up in diced pieces.
Around 3 cans of small biscuits cut four ways each (you can use more if cooking for more people)
salt/pepper to taste (tip –use lots of black pepper)
tsp of poultry seasoning (optional)
1 stick butter
1 can of cream of chicken condensed soup
1/2 can milk and roughly 4 cans of water for boiling the chicken
Directions:
Wash chicken, cut into small diced up pieces. Have water on stove in large stew pot (the four cans) ready for chicken. Salt/pepper to your liking and the tsp of poultry seasoning(optional) with half of the stick of butter. Let chicken boil on high for about 5 minutes then on medium for about 10 more minutes. Add the cream of chicken and half can of milk, then stir good for about 5 minutes or until boiling. I use a lot of black pepper when I make these. Now its time to add the dumplings (canned biscuits). I buy small cans and cut them four ways. Next is the rest of the butter. Cover & Let boil on med/high for about 20 minutes or med/low for about 30 minutes, stirring very often because they stick really easily if you don’t stir. The cream of chicken and milk really thickens them up. The dumplings go in big but they will shrink down to very little so that is why I add so many. Every ingredient can be adjusted to the amount you want. Do not add the dumplings until you have boiling water and cooked chicken.
Serve with hot corn bread or saltines. A family favorite around here! ~ENJOY~
