Southern Pinning Turkey Soup
Whether you have leftover turkey from Thanksgiving or you buy it on a regular basis, turkey tastes great in soup! I threw this recipe together and it has become a favorite here at our house. Give it a try, you will love it! 🙂
Ingredients
Around 3 turkey breasts cut into diced pieces (or shredded left over turkey if already cooked)
1 can of chicken broth or a couple of bouillon cubes
3 bay leaves (optional)
teaspoon minced garlic (optional)
2 celery sticks diced
2 small packs of baby carrots
Half onion diced
1/2 stick of butter
1 bag egg noodles
1/2 teaspoon basil leaves (or Italian seasoning –optional)
dash of garlic salt
salt/pepper to taste
Directions
In a stockpot add the amount of water you desire then add the turkey , salt & pepper, butter and broth. I use a bit of kosher salt when I boil the turkey ( if it’s not left over turkey). Let the turkey boil for about 20 minutes on medium heat (if you are using raw turkey). Remove from heat and add all other ingredients, return to heat and cover. Simmer on low for about an hour.
This entire recipe can be placed in a slow cooker on low for about 4 to 5 hours also. (cooking times vary according to your cooker).
Egg noodles get very thick so the amount on those may vary. More water to get a thinner soup and less to get a thick soup. Get creative and substitute the celery with cabbage and even add a can of diced tomatoes!
Serves around 6 to 8 people.. Refrigerate or freeze leftovers
