With just a few ingredients, you can have a fabulous shrimp alfredo dinner in your plate! My husband threw this recipe together a few years ago and I thought I’d share with y’all! It’s became a real family favorite!
Easy Shrimp Alfredo
Ingredients:
16 ounce Penne Rigate pasta (or pasta of your choice)
16 ounce jar of classic alfredo sauce
Tablespoon of olive oil and 1 teaspoon of butter (for sauteing)
1 can of mushrooms (or a container of fresh, your choice)
60-80 raw shrimp –peeled, devained & tail off
Salt/ pepper to taste
Garlic salt to taste (while sauteing)
Parmesan cheese for topping (optional)
Directions:
Boil your pasta in large boiler and add salt to taste
While pasta is boiling, in large pan, add olive oil, butter and let melt and heat then add shrimp and mushrooms (salt/pepper & a few dashes of garlic salt). Saute until shrimp are pink in color (do this on medium heat). Your mixture should look like this
After your pasta is done, drain and set aside. Drain excess liquid off the shrimp mixture also. Then combine the noodles in with the shrimp mixture and alfredo sauce. There will be extra sauce stuck to the sides of the jar so I always add some water and shake really well then pour again. Stir all ingredients together really well and simmer for another 7 to 10 minutes until thoroughly mixed and heated. This serves six and four if you want extra! We also top ours with Parmesan cheese.
Other added ideas are diced onion while sauteing. We have tried Mozzarella cheese for an additional topping also (very good). A side dish idea is a nice garden salad and don’t forget the bread-sticks! 🙂
